The Gardener
Wojtek Żurek started his adventure with Water&Wine restaurant almost 4 years ago. It was a work at the grass roots – together with our chef Marek they designed a precise plan from the scratch. They wanted to create a high quality place which would be both natural and diverse. They drew a draft of the garden, the field and the greenhouse. Then step by step they started putting it into action.
Wojtek had been fascinated with gardens since early childhood, he had always been interested in plants. He starts his work at the crack of dawn. First he takes a tour round the field and the garden. He checks if the plants have enough space to grow, he picks ripe vegetables, he replants herbs. A well-tended garden requires time and attention because diseases and worms spread in a flash. Wojtek takes care of 4 grape varieties (rondo, regent, solaris and chardonnay), which we later use in wine production. As the project was developing, Andrzej and Marcin started helping Wojtek. Once the work in the field is done, Wojtek gets down to reading books. He constantly develops his knowledge in order to be prepared for new challenges. New ideas to plant unknown plants, vegetables and herbs keep popping out. Currently Wojtek works with our team on the new set-up for the garden and the new system of growing plants in woodchips.
