Last week, under the first rays of spring sun, we started working in our garden. The idea to set up our own garden was born three years ago. Fresh herbs, vegetables and fruits are fundamental to our work, this is why we prefer to grow them ourselves. Our own garden guarantees that our kitchen gets 100% of what’s best in the nature with no chemical additives. If you remember the taste of fresh strawberries straight from the bush in your grandma’s orchard, you know what we are talking about. In the beginning we were only harvesting in the spring and in the summer, but we enjoyed it so much that we decided to develop the project, and so we built and orangery which we are heating up in the winter. Our gardener Wojciech Żurek taught us everything about about growing fruits and vegetables. The garden is one of the places where we search for ideas for our dishes. The nature is an endless source of inspiration. In the garden we discover new flavours and new flavour combinations. Some of our seedlings are so rampant that we are yielding enormous crops. It gives us many possibilities to make various preserves. We marinate, ferment, smoke or sometimes serve them raw. The first to come in the spring menu are radishes, salads, and differet types of herbs. You will have a chance to try them during our next dinner on the 20th of May.
